Israel, officially the State of Israel, is a country in the Southern Levant, West Asia. It is bordered by Lebanon and Syria to the north, the West Bank and Jordan to the east, Egypt and the Red Sea to the south, and the Gaza Strip and Mediterranean Sea to the west. Israel's governmental seat is in its proclaimed capital of Jerusalem, though Israeli sovereignty over East Jerusalem is not recognised under international law and only has limited recognition internationally.^{[neutrality is disputed]} Tel Aviv is the country's economic center and core of its largest urban area.

Israel is located in a region known as the Land of Israel in Jewish tradition as well as Canaan, Palestine, and the Holy Land. In antiquity, it was home to Canaanite city-states followed by the kingdoms of Israel and Judah. Situated at a continental crossroad, the region was then ruled by various empires from the Romans to the Ottomans. Amid European antisemitism, the late 19th century saw the rise of Zionism, which sought a Jewish homeland. British occupation led to the establishment of Mandatory Palestine in 1920. Jewish immigration and British colonial policy led to intercommunal conflict between Jews and Arabs. The 1947 UN Partition Plan, proposed in the aftermath of the Holocaust, triggered civil war between them. (Full article...)

The Land of Israel (Hebrew: אֶרֶץ יִשְׂרָאֵל, Modern: ʾEreṣ Yīsraʾel, Tiberian: ʾEreṣ Yīsrāʾēl) is the traditional Jewish name for an area of the Southern Levant. Related biblical, religious and historical English terms include the Land of Canaan, the Promised Land, the Holy Land, and Palestine. The definitions of the limits of this territory vary between passages in the Hebrew Bible, with specific mentions in Genesis 15, Exodus 23, Numbers 34 and Ezekiel 47. Nine times elsewhere in the Bible, the settled land is referred as "from Dan to Beersheba", and three times it is referred as "from the entrance of Hamath unto the brook of Egypt" (1 Kings 8:65, 1 Chronicles 13:5 and 2 Chronicles 7:8).

These biblical limits for the land differ from the borders of established historical Israelite and later Jewish kingdoms, including the United Kingdom of Israel, the two kingdoms of Israel (Samaria) and Judah, the Hasmonean kingdom, and the Herodian kingdom. At their heights, these realms ruled lands with similar but not identical boundaries. (Full article...)

Schwester Selma, 1968

Selma Mayer (3 February 1884 – 5 February 1984) known as Schwester Selma (German: Sister Selma or Nurse Selma) was an Israeli nurse who was the head nurse at the original Shaare Zedek Hospital on Jaffa Road in Jerusalem for nearly 50 years. For many years she was the right-hand assistant of the hospital's founding director, Dr. Moshe Wallach. Working long hours and with limited infrastructure, she trained and supervised all personnel at the hospital from 1916 to the 1930s, and founded the Shaare Zedek School of Nursing in 1934. She never married, and resided in a room in the hospital until her last day. In her later years she became known as the "Jewish Florence Nightingale" for her decades of selfless devotion to patient welfare. (Full article...)

Jachnun or Jahnun (Hebrew: גַ'חְנוּן, Hebrew pronunciation: ['d͡ʒaχnun], ['d͡ʒaħnun]) is a Yemenite Jewish pastry, originating from the Adeni Jews, and traditionally served on Shabbat morning, with resek agvaniyot, hard-boiled eggs, and zhug.

Jachnun has become popular in Israeli cuisine, where it is served in homes (usually on Shabbat), as fast food at roadside stalls, and in restaurants, events, and dining halls. (Full article...)
